Pearl's Christmas Soup

My wonderful Grandma Pearl made a large pot of this soup every year for her Christmas Eve gathering of family and friends. This year, I got the recipe from my mother and continued our holiday tradition of getting together and enjoying this hearty tomato-y stew. When I prepare this recipe, I prefer to omit the ground beef and make it as a vegetarian soup. This recipe makes a LOT of soup and could easily be cut in half to make less.

Ingredients
  

  • ground beef
  • salt
  • pepper
  • 1 large red onion
  • 2 red bell peppers
  • 8 ribs of celery
  • 6 carrots
  • 4 potatoes
  • 3 med turnips
  • ½ head green cabbage
  • 2 cans whole peeled canned tomatoes
  • 32 oz vegetable broth
  • water if needed

Instructions
 

  • Chop all vegetables
  • In a large pot, brown the ground beef (if you're using meat), salt, pepper, onion, bell pepper, and celery.
  • Add carrots and potatoes
  • Add turnips, cabbage, canned tomatoes, and vegetable broth. Stir to break up large pieces of tomato.
  • Cover and simmer on low heat till vegetables are tender.
