Pearl’s Christmas Soup

My wonderful Grandma Pearl made a large pot of this soup every year for her Christmas Eve gathering of family and friends. This year, I got the recipe from my mother and continued our holiday tradition of getting together and enjoying this hearty tomato-y stew. When I prepare this recipe, I prefer to omit the ground beef and make it as a vegetarian soup. This recipe makes a LOT of soup and could easily be cut in half to make less.

Ingredients
  • ground beef
  • salt
  • pepper
  • 1 large red onion
  • 2 red bell peppers
  • 8 ribs of celery
  • 6 carrots
  • 4 potatoes
  • 3 med turnips
  • ½ head green cabbage
  • 2 cans whole peeled canned tomatoes
  • 32 oz vegetable broth
  • water if needed
Instructions
  1. Chop all vegetables
  2. In a large pot, brown the ground beef (if you're using meat), salt, pepper, onion, bell pepper, and celery.
  3. Add carrots and potatoes
  4. Add turnips, cabbage, canned tomatoes, and vegetable broth. Stir to break up large pieces of tomato.
  5. Cover and simmer on low heat till vegetables are tender.
